Make sure you are using kosher salt for the brine. If you use regular iodized table salt, it will taste too salty. Kosher salt has less sodium gram for gram. Try it that way next time and let us know... Hope this helps!

This recipe was just as simple as it appeared to be on the show.

I thoroughly enjoyed the flavor of this dish. I do feel that you really don't need to add any more salt.

The brine and the seasoning have quite enough.

I eventually (meaning later that week tried it with pork and with beef and it's just an all around sensational BBQ recipe!

    Thanks, Claire!

The chicken was very moist and well seasoned. It even looked moist. Probably this is the best I have ever made. The brine is the key. Left over chicken sandwiches were still juicy. Thanks.

The best barbequed chicken recipe EVER! Brining the chicken before roasting resulted in the moistest chicken I've ever tasted. Will definitely serve this during the July 4th weekend and beyond! Thanks Claire!

This was by far the juiciest chicken I've made yet. I love the brining technique--it will allow for juicy chicken no matter what seasonings you choose. So far, all of Claire's 5 Ingredient Fix recipes I've tried have turned out wonderfully. I am definitely a fan!

Hi Claire. What a delight to meet you yesterday judging ribs at MIM! I am a huge fan of yours and it was so lovely meeting you in person. You are just as pretty in person as you are on camera. Thanks so much for the autograph.

I adore your show! As you may know, there are many dinner clubs going on in Memphis and I love to watch your show for new recipes for my dinner club. I am just wondering why Food Network doesn't have a show about elegant entertaining and dining. In Memphis, we love to pull out the fine china and crystal and silver and dress up. It's as much about the table setting and the ambience as it is about the food. We also love to BBQ, but I think we all have that art figured out:.

I would love to see you produce a show about elegant entertaining at home including table settings. What an opportunity for you to showcase your culinary and communication skills!

I am an executive with a local NYSE company and my husband and I are involved in politics also. So we take advantage of every opportunity to entertain in our home. As we discussed, I also enjoy the Barefoot Contessa; but she is all about casual entertaining. How about elegant entertaining?
