    Love peanut butter cookies but they always have that cardboard taste in them. However these do not! I love them, also only 4 ingredients makes them really easy to make. My 3 year old loves helping me make these, great for kids being soo simple. I think these are the best ever peanut butter cookies; thanks Claire for this one.

    These cookies are amazing! I did only add 3/4C of sugar (1/2 granulated and 1/4 brown and a bit extra vanilla, but they were delicious! To help prevent a gritty texture, be sure to cream the peanut butter and sugars together prior to adding the egg - this gives the sugar a chance to dissolve into the peanut butter. Also, be sure to use a room temperature egg. Because there is no flour in this recipe, the proteins in the egg need to be loose in order to support the cookie. Better than any peanut butter cookie recipe I have tried!

    I left out the salt on top, added chocolate chips on top at the end of baking. Very good.

    These are a hit every time I make them. I like to add different fixings to them like trail mix or semi sweet chocolate chips

    These are the best peanut butter cookies I've ever had and so easy. I love to cook, but not bake, so these were right up my alley. Absolutely wonderful!
