    My 9 year old daughter made these with me as her sous-chef. This is now our favorite peanut butter cookie. They are moist, even after a day, and not crumbly at all. We rolled them into firm balls and then patted them down with our palm slightly before putting fork marks on them. Perhaps that is why they stayed together so well. The peanut butter taste really shines especially with the coarse sea salt. I love any recipe that can cut out flour. YUMMY!!!

    I really liked the idea, simplicity and ease of this recipe however they were gritty and overly sweet....Obviously the sugar crystals stay solid when mixed with the peanut butter thus the sandy gritty texture..the single egg does not work well as a binder as they crumbled horribly even when cooled....Sorry, Claire you have many good reviews and I am sure my review will not affect your ratings.... I love Peanut Butter Cookies and wanted a way for kids to be able to make them with minimal effort and still have a quality result. You have some great recipes...just not this one....

    After deciding to make this recipe I was disappointed to discover that I only had a half of a cup of peanut butter remaining. However, I did have...a popular chocolate, hazelnut spread. So I substituted the other half cup for it and reduced the sugar by a little over 1/4 of a cup since the chocolate, hazelnut spread contains sugar. The texture is sort of crumbly, yet still tender and moist. I can't wait to experiment with other variations.

    I only had crunchy peanut butter in my pantry, so I used that. These are so good! I like the extra cruch the peanuts give the cookies too.
