Ingredients

  • 1 cup garlic-infused olive oil
  • 1/2 cup white balsamic vinegar (reduced by 1/3)
  • 3 cloves garlic, sliced
  • 2 large tomatoes, peeled, chopped and divided
  • 3 tablespoons chopped fresh tarragon, divided
  • Kosher salt and freshly cracked black pepper
  • Tomato slices, for serving

Directions

In a non-reactive bowl, whisk together the oil and vinegar until completely combined. Add the garlic, half the tomatoes and half the tarragon. Season with salt and pepper and stir to coat. Cover and chill 6 hours.

Strain the mixture through a fine sieve and discard the solids. Stir in the remaining tomatoes and tarragon. Serve over slices of fresh tomato.

NICE AND LIGHT AND TASTY. YOU CAN SUBSTITUTE FRESH BASIL IF THAT IS MORE TO YOUR TASTE. ALSO VERY NICE ON PASTA!

I am a tomato fanatic - was very excited to try this recipe. IT WAS DELICIOUS!!! I couldn't bear to throw away the tomato liquid, and I left the skin and seeds in the tomato (which is strained out later anyway. This made the dressing a little thin, so I added a bit of dijon mustard and a dash of heavy cream to thicken it up. I couldn't necessarily taste the tarragon, and I think the dressing would be equally delicious with parsley, basil or thyme. This dressing is good on anything - vegetables of any kind. THANKS CLAIRE!!
