NICE AND LIGHT AND TASTY. YOU CAN SUBSTITUTE FRESH BASIL IF THAT IS MORE TO YOUR TASTE. ALSO VERY NICE ON PASTA!

a little blah...but i made it again b/c its light for the summer. i used it on bibb lettuce salad.....with tomatos and radishes...

I am a tomato fanatic - was very excited to try this recipe. IT WAS DELICIOUS!!! I couldn't bear to throw away the tomato liquid, and I left the skin and seeds in the tomato (which is strained out later anyway. This made the dressing a little thin, so I added a bit of dijon mustard and a dash of heavy cream to thicken it up. I couldn't necessarily taste the tarragon, and I think the dressing would be equally delicious with parsley, basil or thyme. This dressing is good on anything - vegetables of any kind. THANKS CLAIRE!!
