    Hi Claire,
    You are so fortunate to have a cookbook with your grandma's favorites. Unfortunately, I am not so lucky. It's hard to believe, but this is the only recipe of
    my grandmothers that I have. I spent all my summers with my mother's parents in
    North Carolina, I lived in Va. This was almost always a Sunday favorite. Why she
    only cooked it on Sundays I do not know. I watched her make it for so many
    years and since it was so easy it was not hard for me to remember. When I saw
    you making it on TV I was a little shocked. It was like being at my grandmother's
    side again. If I had only been a little older before she died, maybe I could have had a few more of her recipes.
    Two other recipes that she made weekly and kept in a cookie jar for the neighborhood kids to enjoy were large, soft molasses cookies and sugar cookies.
    What I would give to find those recipes.
    Thank you for sharing my favorite corn recipe and bringing back such wonderful memories. Every time I make this, I think of my grandmother.

    I used leftover corn on the cob, so it just had to cook a few minutes with the bacon to warm it. It was still delicious.

    Instead of bacon fat, I used 2 pieces of sauted turkey bacon in 2 T olive oil for seasoning.
    I also added chicken stock as it disolved, to keep it moist.
    After 45 minutes it was creamy.

    The flavor of the corn and the bacon went well together but my corn never became creamy I added another 20 min to the cook time and it still never became creamy. Maybe it was the corn.

    Not sure why some had trouble as for us the bacon grease was not evident at all. Since there are just two of us and I had plenty of left overs I used a cup in my jalapeno corn bread recipe ..... Awesome!! Kudos to Claire for keeping the little pieces of corn out of her hair as I managed to have them land all over my kitchen BUT it was worth it :-

    I bought fresh corn and bacon and followed the recipe exactly. I had to keep adding water because it was dry and sticking to the pan. It never got creamy at all. Maybe it was the corn?

    My husband and I really enjoyed this dish. I had no idea until watched this episode that creamed corn contains no cream or milk! What a wonderful surprise. I made it for dinner last night and there definitely wasn't enough and I exceeded Claire's recommendation of 2 ears per person. The only suggestion i have is to adjust bacon according to taste preferences. I thought the recipe called for more bacon than I would have liked, there was just a tad more bacon grease taste than I expected. However, my husband loved the way it was.

    This was a good recipe that was easy to prepare. I would recommend adding the bacon to the top of each individual serving. I added it on the top of the entire dish; since I had leftovers, the bacon was mushy instead of crisp the next day.

    This was a great recipe. I only had 5 ears of yellow corn so I cut down the bacon. I did cook for 35 min and kept adding water when the corn started to stick. I used a non-stick pan instead of iron skillet. Next time I'll experiment with butter/margarine instead of bacon. This was a big hit with my husband!!

    This dish was not horrible, but it came close. I'm not sure about the others, but the corn tasted like bacon grease. It didn't even have a corn taste to it at all. I also used only 5 slices of bacon instead of 6 like the recipe calls for. I think next time I will cut the bacon down to a slice or two and maybe add butter or something. I LOVE bacon, but don't want to feel like I'm chugging bacon grease.
