I have never liked heated up creamed corn from the can. I watched Claire make this today on Foodnetwork and it looked absolutely out of this world! I can't wait to try it and will buy the corn the next time I'm at a farmer's market. I especially liked that it had very few ingredients and no added sugar or cream! Susie

I have a couple of suggestions. We do not grow the white corn. We grow a sweet yellow corn named "Incredible" & believe it has earned its name. My mother uses a vegetable peeler instead of a knife. She also uses the back of the peeler to get the creamy corn milk. This year we already have 15 bags in the freezer for winter. My aunt uses the bacon grease but we just add a 1/2 - 1 stick of butter. So very good & looks great on the table for as long as it lasts.

Not sure what previous poster did wrong (besides spelling recipe incorrectly when he/she was preparing this dish, but this was a really good corn dish. I must admit I did add a little sugar (guess my sweet corn wasn't sweet enough, in any event, my family enjoyed this corn - thanks Claire! Will definitely prepare this again, maybe might add a little green bell pepper, finely chopped for another flavor layer.
