I made this for dinner and it went pretty well. My avacados were small so I used 2. It was very creamy, however I agree 1 cup of basil was a bit too much, next time I will cut it in half. Also I think I may add a sprinkle(1/8 tsp of crushed red pepper flakes or cayenne pepper to the avacado mixture before adding it to the rice. Give the flavor a little lift.

Someone please tell me there is a typo in the recipe......a CUP of Basil.....no way. The Basil was sooooo over powering. We had to throw it out.

Such fabulous flavor!!! You will love this! It has a creamy yet fresh taste. I would have never guessed that avocado and basil were a match...but they really are. The lemon juice is an important element too. Try this! And if you don't have a blender or a food processor handy I am sure a hand mixer would give the same result.

OHHHHHH my god. The name says it all. This is the best rice I have even eaten. The fact that I can taste the basil and lemon is the best part. I also did the sea scallops with saffron aioli, the combination is amazing. Thanks for the recipe Claire Robinson. Keep the recipes coming.

I just tried this tonight, substituting chicken stock for the water, but keeping everything else consistent with the recipe, and it turned out really well. I wasn't sure what to expect with the mixed reviews, but I will definitely be making this again. The rice was so creamy and delicious and the bonus is that avocados are good for you, so you can sneak something healthy into dinner!

I made this recipe because I thought it would be an easy way to sneak avocado into my husband's diet, since he hates it. I made a few substitutions: I used brown rice, two avocados, and a combination of mint leaves and cilantro, since I had no basil. I also used chicken broth to cook the rice and in place of the water in the dressing. The outcome was DELICIOUS! My husband loved it! Awesome idea, Claire!!

I took the advice of some of the other reviewers and used 2 avocados, added some garlic and red pepper flakes. It was to die for!!!
