    I made this salad for a BBQ the other weekend, it was absolutely a grand slam! The rest of the meal was great, but this salad was everyone's favorite part. I think it would turn out well with baby spinach as a substitute if you don't care for arugula, but I think arugula is the best first choice. The balsamic reduction complements the sweetness of the watermelon terrifically, but I recommend feta cheese over goat cheese as I think it does a better job of rounding out the flavors.

    We saw this demonstrated on foodnetwork and it looked SO GOOD we had to try it.
    The secret to the grilled watermelon is a pan SO hot that we didn't even have the heat on any more and it grilled them perfectly. This was a great colorful plate in the dead of winter but we are really looking forward to doing in the summer when the melon is at its prime. AND with guests to WOW due to the simplicity but obvious gourmet flare.

    We made this last weekend and thought it was disgusting....the watermelon took forever for the grill marks and it got soggy...so we just put sliced watermelon on the salad instead...I think a mixture of greens would be better with the arugula.. Arugula by itself was overwhelming for our taste.

    This salad was easy to make and looked beautiful. I used my grill pan on high and the grill marks turned out perfect without making the watermelon too soggy. I will make it again and plan on wowing my friends with this beautiful and yummy salad!

    I cook from FN all the time and I must say this is one of the most interesting I have ever tried. Besides being undeniably delicious, it was just gorgeous and was so differnt. I have made a watermelon, feta salad for years but this was so much more intriguing. I despise goat cheese so I substitued feta instead and cut it into tiles just liket he watermelon. I also topped with chopped kalamata olives which was a nice touch. I served with the rest of the meal Claire recommended and all were fabulous. I rounded it off with grilled zuchini and red onion as well as Ina's recipe for tzatziki sauce. Perfection!

    I made this tonight along with Guy Fieri's Prosciuttio Wrapped Shrimp. A agree with a couple of people here. I used the outdoor gas grill to grill the watermelon and got it really hot but it took too long to get any grill marks on it. When it finally looked like it was grilled, it was a bit mushy. The arugula (and I used a bit of watercress too lettuces were excellent with it as was the goat cheese. I put the goat cheese in the freezer for about 10 minutes to make it easier to crumble. I would definitely try this same recipe with grilled peach halves! Also, I think it would be just as good or even better with the watermelon planks not grilled and just chilled really, really well.

    First I want to say that neither my husband or myself like watermelon. But I saw this recipe yesterday morning and thought "What the heck I'll give it a whirl". We both love goat cheese and arugala and balsamic and I thought that grilling the watermelon would change the taste.

    It was wonderful! I had my grill on high and put them on the top rack so they wouldn't be too close to the flames. They got a wonderful sear on them and the grilling really did change the flavor, in a good way! 2 people not fans of watermelon ended up loving this salad and I will definately be trying this again.

    Now I want to try the lamb recipe!
