This recipe is great tasting, but COOKS beware. If you're using an Electric Stove top it takes almost 45 minutes to get any curds. For the first time making this wonderful tasting Ricotta, I added more cream, milk, lemon thinking I was doing something wrong. After 45minutes of stirring, decided to try draining the liquidy mixture through cheese cloth as instructed. Much to my surprise I did get some Ricotta but not sure it's the same curd that you would get off the Gas top stove. Kind of felt cheated in the amount that rendered for what I put in. I still will say that the recipe is great tasting no matter how much else you have to add in. I just think that there's a difference in rendering/time between Gas & Electric stove tops. Wished I had known from the show before attempting this. There is a difference between Gas & Electric cooking. Thank You.

Just finished making this...is was super easy.....and delicious!! I used 2% milk instead of whole milk (to lessen the fat and calories and it was great. A touch of honey on top makes it even better. Thanks Claire, I will be making this all the time now.
