I had the same problem as many of the other reviewers, the pudding did not set up, even though it had great flavor. Next time I will add more cornstarch. Also, on the show she blended the milk and corn in a blender, so that the milk is infused with the corn flavor. The instructions in the printed recipe are not clear on this.

Was very dissappointed...I love corn pudding and this one, although the mixture tasted good, didn't set up. Not a fan of using cornstarch as a thickener so I won't make it again unless I can come up with something else (tasteless to use as a thickener.

This has good flavor and very simple to make! If you are having trouble to get you pudding mixture to thicken it is likely because the variety of corn used didn't have enough starch to begin with or you didn't extract enough after running the back of your knife over the corn cob. Try adding a tablespoon of cornstarch at a time and you should get it to thicken nicely. I added one more tablespoon than it called for and it thickened beautifully in only 4 minutes.

I knew as soon as I saw this episode that I had to make this dish and I'm happy I did. It was so simple and just my kind of dessert. The only thing I would do differently next time is add more cornstarch. My pudding didn't thicken to the consistency of a flan as Claire compared it to. Maybe it was because I used 2% milk instead of whole milk? Next time, I'll add 2 extra tablespoons of cornstarch instead of 1. Also, I used less sugar than what the recipe calls for because corn is already naturally sweet and it was just right to my liking.

And to answer another reviewer's question about why strain the blended mixture through a sieve or mesh: it's so the pudding is smooth without catching any of the corn pulp/bits.

This was absolutely delicious. The texture is so creamy. It is a great breakfast, side dish or even dessert. If I were using it for a dessert or for a vegan dish, coconut milk would would work best. My pudding set very well - be sure that it is thickening while you cook it.

Very disappointed. I could not get this pudding to set. I used the exact ingredients and used a blender as Claire did on the show. It tasted good but just would not set, even after I added more cornstarch and cooked longer. Very disappointing....

Used a food processer - big mess, added salt, vanilla, strained, all good and delicious...you might have to eye ball the spices, I did.
