Flavors were yummy, and I'll make it again. Like other reviewers I loved the apricot paired with kalamata olives. Yum yum! Even my boyfriend liked it.
I did have an issue with the couscous sticking, so I'll not cover it while its "cooking" next time and I might try the Israeli Couscous.

I thought it had a great taste but it was too dry. I don't know if I boiled the stock to long and it evaporated but it needed more moisture. Other than that it was excellent!!!!!! The combo of the salty olives w/ the apricots was a pleasant surprise. I will make this one again for sure!!!

I had unexpected company for dinner and realized I had everything on hand to make this couscous for a side dish. I also threw in a handful of sliced almonds. It was a big hit, even with a college guy who is a rather picky eater. I'm making it again for Fathers Day.

My first time seeing this program. THRILLED! I haven't tried the recipe yet for the couscous but can't wait!!! I have a wonderful garlic olive oil that would be an excellent addition also, I can't wait to put the apricots and olives together! All of you negative Nellies, have a little imagination! Claire, you are awesome and personable! Needless to say, I loved your show!

I used Israeli couscous instead and it was great! I loved how easy and tasty this recipe was.

the sweetness from the apricots pairs beautifully with the saltiness from the olives. This is an excellent side dish!

I have never had apricots nor really eaten couscous.. so going into this recipe, I was a little worried. But it was fantastic, light and fluffy!! Just wanted to keep eating it! We did use whole wheat Couscous and added no extra salt. I just started watching this show two days ago and really wanted to cut back on extravagant shopping! So we decided to try the lamb and couscous dinner! Both were great : Highly recommend!!!!
