I made this couscous today and really enjoyed it! I used flavored instant couscous (roasted garlic and olive oil rather than plain which I think gave it an extra punch of flavor. I agree with whoever said extra salt is not needed. Between the seasoning packet in the rice, the olive and the chicken broth there was plenty of salt. I also added a little lemon zest to give it an extra touch of freshness and flavor. Yummo!

I was very surprised at how bland and boring this dish was. I was doubly surprised since I read the other reviews before trying this recipe. The flavors are so muted that they get lost in the couscous. If you like subtle then give this a try. If you prefer bright flavors don't waste your time on this one.

This recipe for couscous gave our family a new respect for the forgotten grain.
It was easy and fantastic! I'd serve it for company any day.

This was the first time I saw this show,by accident really.I have been a long time viewer of the Food Network(since the beginning.I have my favorite shows(Triple D,Unwrapped etc which i watch regularly but this show has jumped to must see Tv in my mind.As someone who has a passion about cooking the show and recipes were quite engaging.Claire comes across as a very entertaining chef with recipes that I will try at home(I tried this one-excellent!but at the end of the day it is about entetainment. Her show was like a good friends kitchen who you love to drop by and sample new dishes. Great work!

This is one of the best I have made. I did add 1/2 cup more chicken stock to the recipe and this was perfect.
Lots of flavor, moist, just wonderful!!

Claire, today was my first time ever watching your show, you made the dishes seem so easy to prepare and look so delicious. I am a wife and mother of three.
My children are very picky eaters but I went out on a limb today and did a variation of what you cooked today to rave reviews from my crew.
I grilled boneless skinless chicken breast instead of lamb. for the pesto I used cilantro and green bellpepper with e.v.o.o. and kosher salt. The couscous came out perfect! for the salad I used what was in my fruit bowl peaches and apples
the salad greens were spinach, cilantro and green onion. The balsalmic vinegar Yum! The pomegranate lemonade Yum Yum! I added one blueberry to each of my ice cubes. It was a healthy, filling meal without making you feel overstuffed.

    Thank You!

I really enjoyed making this receipe for my mom. I wanted to make something new and she is very picky too! Did I mention how picky she is?! Anyway, I made this with some lemon herb chicken and some grilled vegetables. My mom had two helpings! This receipe was easy and fun to make. No problems at all, except I did add less onion and a little butter, some olive oil and a dash of lemon juice. I look forward to trying out more receipes!! :

I tried this before I presented it to guests....Ugh !!!!!!!!!

It turned out gummy and sticky.. i think the dried fruit took too much of the liquid.
I ended up adding another cup of chicken broth to make it edible. If we don't eat it, it will be tossed out.
and, I don't think the salt was needed....again, too salty.

Claire, I saw your show today for the first time and am so excited. I plan to prepare all the recipes from your
Mediterranen Grill. They look delicious and I will comment on my results later. This is the first time I have written a comment. Your style is great. Thanks.
