    This was the best little side dish ever. I made it with Claire's curry chicken thighs, that I recently saw on TV. I did make 1 adaptation, that makes it a 6 ingredient fix for me. I put low sodium chicken stock in the orzo cooking water. Hubby loves it too!

    Never watched Claire before but the orzo salad was different and it had a Great taste. I subbed the mint with fresh basil and it went over well.

    First, I'm not a fan of mint or feta so with a couple of substitutions it was a hit. I subbed fresh basil and
    freshly grated parmesan. Served with salmon and a salad of arugula with tomatoes marinated in fresh lemon juice, olive oil, salt and pepper. Garnished with a little grated parmesan!! A definite do-over.

    Delicious. I too love Claire Robinson's recipes and follow her more closely than other cooking show stars. Whenever I make this, it gets gobbled up immediately.

    Delicious! I love all Claire's recipes and this one was no exception. I used baby zuccinis and a lot less feta. Next time I will be careful with the salt as I think adding the salted pasta water would have provided enough salt. There was no need to salt the oil and squash. Mine came out a little too salty because I did that. Still very good side dish. I teamed it up with Chinese Chicken Wings.

    Yummy! This looked so good when Claire made it I ran out and bought the ingredients. My husband told me he loved this meal 3 times while he was eating it! I will make this often.

    Delicious! Didnt add the second amount of olive oil and used reduced fat feta-- turned out great! Simply-kinda healthy-quick side!

    This recipe fell short of my expectations, overall it lacked in taste, I had to add a lot of garlic powder, salt, pepper,and lime juice along with mint leaves for the actual flavors to shine through.
