    Delicious! Didnt add the second amount of olive oil and used reduced fat feta-- turned out great! Simply-kinda healthy-quick side!

    This recipe fell short of my expectations, overall it lacked in taste, I had to add a lot of garlic powder, salt, pepper,and lime juice along with mint leaves for the actual flavors to shine through.

    I only used half of the olive oil also and it was perfect. I like it best at room temp.

    Luckily I only used enough oil to coat the pan or it would have been far too oily. The mint is VERY strong and overpowers everything. Maybe add basil or a half cup of chicken broth instead of the orzo water?

    I read all the reviews and was excited to make this recipe, but in the end, it was just ok. Maybe I need to add more salt and pepper, but I just didn't think it had enough flavor.

    Great dish for weeknights! I used about 3/4 lb of squash & zucchini combined, cooked in about 2 tsp of oil (the only oil I used... which I thought was plenty. I also added a thinly sliced shallot to the squash mixture when cooking and substituted goat cheese for the feta. Would definitely make again!!!

    This dish was very easy to make, and the whole family enjoyed it. I omitted the feta cheese, since a few people in the house don't care for it, and the dish still tasted great. I also used less oil than the recipe called for.

    I have tried several Orzo recipes and the wife hasn't been happy with them. Well she is a very happy camper now. She loved this. I am not a fan of squash but I liked it in this recipe.
