    I never thought of adding parsnips to the potatoes, for us it was a little on the bland side. I think a good to substitute cauliflower in place of the parsnips.

    I have only recently discovered parsnips and am happy to have this recipe to add to the different ways I can use them. It's a great alternative to plan mashed potatoes, with no added effort.

    Watched the show Sunday A.M.and made them for Dinner with the Bottom Round Roast she made on the show. This was an excellent recipe that I will make again. Wonderful flavor . I will also be making the leftover Potatoes into the little potatoe cakes she made with the leftover Roast for the Panini's for dinner on Monday.

    Try Yukon Gold Potatoes with half SWEET POTATOE. It is out of this world. Add 1/4 cup RANCH DRESSING with 1/2 cup BUTTER, PEPPER AND ONION POWDER TO TASTE. I'ts so YUMMMY//

    I usually only use parsnips in their whole form in stews and they seemed to make the potatoes just a little to sweet for my liking... may have liked the dish better with fewer parsnips?? Also they did not cook at the same rate as the potatoes even with following the directions exactly so the final product wasn't perfectly smooth. Need to tweek a little if I am ever to make again.
