    I screwed this up by buying parsley root instead of parsnips & made it anyways & it was still fantastic. Went perfectly with the pot roast.

    I had never had parsnips before, so I was a little unsure of this recipe. I decided to try it anyway and all I can say is WOW! So delicious. I will definitely make my mashed potatoes this way from now on.

    I love parsnips and was delighted to see another recipe. The mash was simple and excellent with the pot roast. Will definitely try the croquettes, shame the recipe was not posted.

    I live in a small town and had a hard time finding Parsnips when I finally did they didn't look pretty and almost bent in 1/2. I was so determined to make this recipe I cleaned them up and used them anyway. Just in case I made a separate batch of regular potatoes guess what my husband and daughter liked the parsnip potato mash better. I googled the info on them to see if it is worth tracking them down again and it is they have more nutritional value than potatoes or carrots! I will be telling my local grocery to keep this fresher and in stock! The roast rocked as well and I have a wonderful family roast recipe so hesitated to do anything different. It was a hit! It scored right up there with our family favorite for roast!

    since there was no recipe for the croquetts, i used the extra mash (and roast for shepperd pie. mega good! so good , i may never ever look for the missing recipe. after all, who really needs to cook fried foods.

    First time ever having parsnips and what a treat. I usually add yams/sweet potatoes to my mashed potatoes and now I love having a new veggie to add for variety. My whole family loved the dish :
