Not that it was rocket science but came out wonderful. Parsnips may become a permanent part of my mashed potatoes. Going to attempt the croquettes tonight.

The parsnips in this recipe were a great addition to ordinary mashed potatoes. They lend an little sweetness to the recipe that will make people wonder what you've done to make those mashed potatoes so special.

This was very good. I followed the instructions to the letter and it came out perfectly. Even my son ate a large helping, and he is VERY picky. As to the ham and cheese croquettes...it looked like 2 T flour to me, and the other ingredients to your taste. Instead of posting complaints/questions about recipes that aren't posted...why don't you email the food network. If all of us do it enough they might start posting all the recipes in a timely manner. I don't think they even look at these posts, if they did they'd have fixed it by now. If I happened to be one of these chefs I'd be furious.

My estimates 2c potato/parsnip mash 1/4c flour 1/2c diced ham and 1/2c shredded gruyere. Sauteed in canola oil. The finished patties look about 1/4c. My opinion the amounts of ham and cheese are up to the cook =

I've made these before my own version with left over potato. Super easy I don't really think there is wrong or right measurement for this. I watched the show and i have a dvr unfortunatley she doesn't really say any measurements. What I did get out of it: 1. left over mash half a bowl ( just eye ball it 2. country ham cut into dices 3.gruyere cheese ( or like she says any cheese you like/ plus how much cheese you want can depend on you too 4. 1/4 cup of flour
mix everything and fry in vegetable oil. shouldn't take long all you are doing is getting a crust on the outside. Hope this helps

so I just finished watching a re run of your episode where you cooked the parsnip potato mash and i soo want to make but also want to make the ham and cheese croquetes i come to the website to try to find it and cant find it i made an account just to write you if you can please post the recipe. Am so craving that right now (am pregnant so my cravings are very high LOL please post soon thanks
