this was fantastic!!! both my husband and I loved it! and you can make it with any seasonal apple - I used local Honey Crisp as they looked great at the market. Claire is such a good cook and so fun to watch - I am a new fan! will be making other Claire recipes for sure!

Yum! After seeing this on the show yesterday, I just had to try it. It was wonderful!! The pork stays nice and moist and the gravy is delicious!! I can't wait to make it again.

This was an excellent recipe and one I will make again, my wife is gluten free so we had a bottle of Woodchuck Granny Smith Draft apple cider on hand, and it worked perfectly. If you like pork loin roast, this is AWESOME!!!!!

Loved this! Made the roast, spaetzle and greens. Took other reviewer's advise and made some changes. Did not want to use hard cider so I used apple cider and brandy instead. I also added thyme, sage and garlic. Like other cooks, I had to continue cooking my roast 25 additional minutes to reach 145 degrees. I used a hand held blender to puree my gravy right in the pan (less clean up. So easy yet absolutely scrumptious.

I just made this tonight and LOVED IT - HOWEVER - I also did some changes.... I could not find hard cider and used a really good quality Apple Cider. ALSO - I liked the onions and apples in the gravy left the way they cooked - I DID NOT PUREE THEM - they were fantastic with the very moist pork roast. I do not see how she said 25-30 min. to cook the roast in the oven. I did NOT overcook my roast but it needed an additional 25 min. to reach 145! I served this with oven roasted baby potatoes and red cabbage!!!!! FANTASTIC !

This was soo delicious and so unexpected! The onion and apple made the gravy a perfect texture with a sweet and savory flavor. The pork was so tender that the kids cleaned their plate. What an exellent recipe!! I will make this a regular in our dinner schedule.

Great, easy recipe! Worked like a charm and the gravy is wonderful. In addition to the salt and pepper on the pork before searing, I did roll in rosemary and then sprinkled the roast with McCormicks Apple Pie spice, just a few shakes. Used apple cider instead of hard. Highly recommend if you are looking to impress. Don't question the cooking time of 25 to 30 minutes, must be the Dutch Oven but the 2.5LB pork roast will come out perfect. Thank You Claire - this was my first recipe to try of yours. I am a fan.

I made this for a recent family gathering and everyone raved about it. I substituted apple cider for the hard cider and doubled the recipe. This is a great recipe for beginners.
