This is soooo easy and soooo good. My husband and kids loved it too. I made it twice once with maple syrup and the second time with agave syrup. Both were tremendously delish and are interchangeable. Yum.

This was so simple to make and you don't feel guilty eating it! It's light, sweet and crunchy. Picked up all the ingredients at our neighborhood Trader Joe's and made it before my daughter got home from school. It's a keeper!

This is so easy to make and is so delicious. Plus, it's wonderful to know what's in it, instead of buying store bought mix filled with preservatives and things I can't pronounce. I will definitely make this again.

I couldn't find pepitas *anywhere*, so I substituted pine nuts. I also had to substitute grade A maple syrup instead of the grade B. I only have one sheet pan, so had to cook it in two batches & I ended up eating nearly half of the first batch while the second was baking!! Will definitely hunt down pepitas somewhere - may have to order online - in order to prepare the recipe as intended, but I have no complaints about how my version came out. My only complaint (not only with this particular recipe is... I wish they would include nutritional information for the recipes.

My husband and I both love this. It satisfies the sweet tooth and is healthier than cake or pie.

I saw Claire rave about this recipe and she is right! Take the advice and use TWO pans with parchment paper. Rotate the pans and use cooking tongs to scramble the mix while baking a few times. Try this with yogurt in the morning. I mixed it with applesauce and it tastes like apple pie...only healthy! Next round I plan to add cashews and/or pistachios too!

I also used the agave syrup instead of maple. Very yummy. I have given a few bags away to very select friends. They all love it! Thanks Claire.
