    wow... I'm 1/2 way through and i hope this is going to be good. they're just waffles. this is taking soooooooo much longer than i thought. even if they're gross; it will take less time to eat them then to make them. maybe i can somehow make it easier so i can have these more often (instead of every 4 years!!!! lol

    Patriotgirl54---the recipe states 1 1/2 cup pumpkin in the directions. These were very good and a nice alternative to pumpkin pancakes since we are not a pancake eating family. I only made the waffle as I did not think anyone would enjoy the trail mix topping on the waffles...but only because I have a few choosey individuals for whom I cook!

    Start with a pumpkin 2-3 lbs???? How about give us non-country cooks the amount in CANNED pumpkin???

    I love these waffles! I used canned pumpkin and topped them with toasted pecans and dried cranberries. That way took much less time, and still tasted great.

    Great recipe! Delicious waffles! Loved all the components of the whipped cream and trail mix combined with the pumpkin-y waffles themselves to make for a delicious breakfast!

    Not a complicated recipe, just had a lot of steps-and dishes. I roasted the pumpkin and strained the puree the night before and had no trouble using it the next day. I didn't bring the pumpkin puree to room temperature and I had no trouble with the batter!

    Also used a 3+ pound pumpkin and wound up with double the amount of puree called for in the recipe. 2.5 pounds would probably be ideal unless you want leftovers:

    These are so delicious! The family loved them and I will be making them again! I substituted fresh pumpkin with canned pumpkin puree and it made these so quick and easy to whip up.

    These are yummy. I always cook pumpkins in the fall and need good recipes. I just used yogurt and granola that I bought at the store to top the waffles with. A touch of pure maple syrup and they were " perfection" as Sandra Lee would say.

    To save time, I prepared the pumpkin puree and the topping nuts (minus the pumpkin seeds the day before, so all I had to do was mix all the ingredients and cook on my new waffle maker. My guests loved this recipe, some had seconds! Yummy!
