    It was really easy to make and super tasty! I cant believe how good it was actually. I used regular cucumbers instead of english. The toasted pine nuts made all the difference, so dont skip those; they add a richness to the dish that was much needed. I used regular olive oil and then just squeezed lemon over it instead of infusing it into the olive oil. The lemon was perfect with this dish. It was not too lemony. YUMO! Thanks claire.

    It was good, healthy and I would definitely make this again. I just used a regular cucumber because it was only about 60 cents compared to the 2 dollars of the english cucumbers. I also made my own lemon infused oil by zesting a lemon into the oil. Next time I'll use the scallions and the lemon juice as one reviewer did. I gave it four stars because I'm not a huge fan of pine nuts, which was most of the flavor, but my boyfriend who is LOVED it.

    Easy to make and very tasty! I added scallions for a little more punch & also added some lemon zest & juice. Can't wait to have it for lunch tomorrow! Thank you Claire!!!

    This was my first quinoa recipe. I added chopped tomatoes for color. One daughter liked it, so I've rated this recipe good. I was expecting more flavor...

    Wonderful fresh salad with wonderful texture. I didn't have the lemon infused olive oil, but used lemon zest/lemon juice with olive oil and it turned out amazing. Highly recommended!!

    I made a few adjustments and my family loved this recipe. I made my own lemon oil by zesting one lemon and adding the juice of the lemon to the oil and letting it set while prepping the ingredients (I've done this for her other recipes and it has worked well. I also added chopped fresh parsley, a chopped plum tomato, chopped green onions and some Feta cheese. I don't care for pine nuts so I used toasted slivered almonds instead. I cooked the quinoa in salted chicken broth for added flavor. I know it's more than 5 ingredients, but I take her recipes and use them as a base and go with flavors I know my family likes. This salad is great for weekday lunches.

    nice simple dish as is. I understand the 5 ingredient premise, but the benefit of a squeeze of lemon and some crumbled feta is huge! i upped the cilantro also, but I am a cilantro junkie.

    This was my first 5 Ingrediant Fix recipe and my first quinoa experience, and I have to say I have found a new favorite dish. My partner and I LOVED it! I did make a couple of alterations. I sliced the cucumber pretty thin instead of chopping, I used a handful of cilantro instead of just 2T, and I added a 4oz package of crumbled goat cheese. I almost didn't get the lemon infused oil--thought I could go with lemon juice and zest and EVOO--but I changed my mind. I bought and used the lemon infused oil, and it was wonderful. I was so glad I got it. I made this three nights ago, and loved it so much I'm trying another quinoa salad tonight. Thanks for the tasty new fave!

    I found it easy and the information was very interesting on the show. I learned a lot about this Quinoa that I never knew. I always follow the directions exactly the first time I try a new recipe. I have to say the texture was interesting, the taste was ok and most of the family hated it but I am going to give this Quinoa another try - maybe a different recipe. Sorry Claire :(

    This is a great way to learn how to use quinoa, a super food. I added the juice of a lemon as well as the grated rind to pick up the flavor a bit. Served with sauteed spinach and lemon garlic tofu....what a great meal!
