I have made this several times and it is really delicious. I tend to roast the cauliflower a little longer, about 30 minutes total, because that makes I really soft. Today I did not have dates, so I tried coarsely chopped golden raisins and guess what...FANTASTIC! Much more affordable, too. Give it a try, you will love it.

This odd combination tastes more like a dessert! I used dried dates which made the dish very sweet. In the future, I will decrease the dates to maybe 1/3 cup or so and the pine nut flavor may be more pronounced.

This one is OMG GOOD!!! I've made it several times and just love it more every time. Just wish there was a nutritional breakdown as I'm counting calories and have to wonder just how much of this I can/should eat!

My father in law made this for us the other night and it was AMAZING! My 6 year old, who "doesn't like" cauliflower, LOVED this. Thanks for this easy recipe!

outstanding. brought it to a dinner party and it was a HIT. great idea on the flavor combos. never would have thought of mixing these ingredients.
