Yes, I enjoyed these very much. Soooo simple to make! That is one of the best parts. Then when you take them out of the oven, it smells so good! I bought a mixed medley cherry tomatoes with both red and yellow for color . .very tasty Miss Claire. I love 5 ingredient fix!

This recipe is delicious! I have one great suggestion..add fresh or dried thyme to the tomatoes before roasting! It's a great addition!

These are so delicious, but they don't need the second 20-30 minutes of roasting, IMO. Perfect after 20-25 minutes. I tossed tomatoes with olive oil, garlic and salt/pepper right on the baking sheet (don't need a bowl to accomplish this, and added chopped basil after they came out of the oven. A winner recipe!

Simple and easy. I used about 2-3 teaspoons of oil and omited the salt because my DH has to be a low sodium diet. I used the leftovers on top of a salad the next day want was awesome.

I gave this five stars for how easy it was to make and how much it added to the meal. I added chunks of red onion and fresh herbs to it before I baked it and sprinkled pamesean cheese on when it came out of the oven. It was a great complement to our prime rib, shrimp and swiss chard. After that meal, I mixed all the leftovers with vermicelli and had a great lunch to take to work.

Claire - this one is a winner. Had to improvise with sliced vine-ripened tomatoes, but the juices from the garlic (I smashed it before adding to the pan blended beautifully with the olive oil and tomato juices. I used the leftovers for a topping for my burgers - wonderful. Hint - to add a twist to this recipe that sends it way over the top - add a sprinkling of oregano (I used dried and sugar all over the mixture before roasting. Mouthwateringly delicous. Thanks so much Claire for your fabulous recipes - this one is an easy, inexpensive, and such a gourmet side dish.

ROASTING THE TOMATOES BRINGS OUT THE SWEETNESS AND IS A GREAT BASE FOR MANY, MANY DISHES OR BY ITSELF.

My husband and I had this as a snack with hummus chips . . . it was sooo tasty and easy! Move over chips and salsa!
