Excellent Recipe and super easy to make. I hard boiled my potatoes and then roasted them in the oven plus added bacon for a CookingShorts twist.

YUM-MY! Tell me why I would ever make traditional baked potatoes again. It's a little tedious to bake the potatoes initially on a baking sheet w/ water, so I'll experiment with that 1st step. But, otherwise I'll do the rest of it Claire's way! The parmesan cheese was a tasty, crunchy touch! For serving, I added sour cream w/ chives and cheddar cheese. I'm looking forward to serving this to friends!
As for any difficulty w/ the potato masher, I found it important to use quite small potatoes OR cut larger red potatoes in half (after baking and mash them w/ skin side down. In most cases it was necessary to scrape the under-side of the masher with a knife to disengage the potato from the masher. Also, I didn't get hung up on the appearance of potatoes. In the end they're going to be covered w/ additional cheese, sour cream, bacon, chives, etc!

I have been cooking for about 30 years, and have never had such a bad outcome following a recipe. I followed the directions exactly and used not one, not two but THREE different potato mashers and could not get the potatoes to release from the mashers, even with the use of olive oil. I finally resorted to using what I've come to learn is a chef's best tool ... my hands and even then it didn't work well. The recipe reads well, but from this experienced home cook, it just didn't work. If anyone of you who gave it five stars has a secret to flattening the potatoes, I would love to hear it because my husband was realy looking forward to them. I am still going to finish the recipe, even tho it looks terrible and who knows maybe I will be surprised :

These were so tasty and overall very simple to make. I forgot to pick up scallions at the store, so instead, I ran out to my little herb patch and picked some fresh chives to slice over the top of the potatoes. I really, really liked the cheese on top - next time I am thinking of changing it up with a different cheese. And at this time, no idea what I'll try - it will just depend on what is in the fridge! These will most certainly be added to our recipe file!

This dish was amazing and I highly recommend it. I used a spatula in lieu of a potatomasher and it worked perfectly. I also highly recommend remembering the step to toss the potatoes in oil. I forgot and only drizzled the top. Thankfully my boyfriend had a field day picking at the crispy parts that would not come off the pan :-D

I did love these...a nice change. I actually par boiled the potatoes first, it just seemed easier. I too, had trouble smashing them into neat little bundles like Claire did...but I dont have a masher and was just using a fork so it could have been me. I did usw garlic pepper and "jalapeno" flavored sour cream which they now sell! Really really good...could have passed on the steak and just ate these!!
