This was very good! I used more sausage than it called for and a little more beans. Husband and guest love it. Will make this again.

I hate giving a poor review, and this is maybe only the second time I've done so.
I'm not sure what went wrong, but we really did not like this recipe at all. We were so disappointed, because I really wanted a slow cooker red beans and rice recipe.
As my husband said, we'll just stick to Emeril's red beans and rice and forgo the crockpot. I hope others have success with it - we didn't and were so disappointed.

Added green pepper and some chili flakes. Note the seasoning is actually already in the recipe (it comes from the andouille sausage which is heavily seasoned already. I served the red beans with cornbread. Much better combo than with rice, even though rice is traditional. Rice usually denotes asian food for me. Served with pomegranate martinis. Really brought back memories of New Orleans.

So easy and delicious!!! I did boil the red beans for 10 minutes to denature the compound that causes nasea and GI distress...had no problems. I also added some cajun seasoning, paprika, and red pepper to add a little extra flavor. This recipe was cheap, tasty, and I think it tastes even better the next day, in case you have leftovers.

Red bean poisoning? When I read this I thought no way. So I didn't boil the beans after soaking overnight. Needless to say red bean poisoning is real and is no fun! The recipe on the other hand was great!

I'm trying to get my husband to like the idea of going to New Orleans someday (I love the city. so I figured I'd start to introduce him to one of it's signature dishes through this easy recipe. Mind you I'm also a health nut, so I used a turkey kielbasa and brown rice and added extra seasoning.
It still came out really well and was really easy.... He really liked it too!

As a New Orlenian, I may be considered an "expert" on the subject of red beans. Red kidney beans and red beans are the exact same thing. And, no, they will not poison you. If that were the case 90% of New Orleans would be dead from red bean consumption. lol

This is unreasonably good! I added 1/2 cup chopped green bell pepper. Great. Easy. Good leftovers.

Incredibly easy and delicious. It's nice to get back to the New Orleans tradition of eating red beans & rice for dinner on Mondays without having to work my tush off in the kitchen.
