    We felt like this recipe needed a bit more flavor. I found the correct sausage and no trouble finding the beans, but I think it could be more flavorful. I'll have to check more recipes to see what I could add...possibly green pepper and a few more ingredients.

    To simplify things even further:







    Into the slow cooker goes (in this order whole peppercorns, 2 tablespoons crushed garlic (both to taste, about 2 pounds smoked turkey wings (less fat than sausage and even more flavor, 1 pound dry kidney beans (soaked 2 hours and water to cover. 2 hours on high, then bank it down to low, stirring occasionally until the beans break down. Serve over rice. Cornbread optional, but I require it; that plus a good tabasco hot sauce.

    Made this today with dried, small red beans from the ethnic section of my grocery. I soaked them overnight and slow cooked them for 9 hours and they still were a little tough for me but my husband loved it. I will make again but will soak and boil the beans first. Was a little bland so my son and I added hot sauce. Next time I will add a red bell pepper along with the onion and garlic.

    My husband happened to be watching this episode with me and prompted me to try this menu combination. This is similar to the way I fix most of my beans. I also add a couple tablespoons of sugar. I used pinto beans instead of red beans. It smelled absolutely awsome as it cooked. The entire menu combination was great. My husband was very pleased.

    I made this today. It was super easy and very good. It was a little bland but a few drops of hot sauce was all it needed. Toast some garlic bread and you have one great meal.

    I have not tried this recipe yet but just have to comment on Gzyn that the recipe does not call for red kidney beans, it calls for red beans. There is a variety of red beans and the red beans traditionally used in red beans and rice are slightly darker red and smaller than the kidney bean. I do not like the flavor of red kidney beans so have never cooked them but I have used red beans from the supermarket where I shop and without boiling them first. They turn out just fine. The kidney beans are known for a substance that can make you ill without treating them properly, but I am sure that is for only certain people with a reaction to that. I have a cast iron stomach and nothing like that ever has affected me.

    Thanks for the info! I am going to try this recipe... it seems simple enough, not a lot of ingredients. I am going to soak and boil the beans first. I would have really hated to make my whole family sick!
