This was amazing. The combination of the vegetables with the peaches is both beautiful and delicious. My only problem was trying to remove the skins from the peaches at the end. Tongs wouldn't quite do the trick. Any tips?

I made this recipe for dinner with grilled chicken and Claire's barbecue sauce. We loved it.

I saw the program and watched as the dish was prepared. I thought it a little strange but decided to try it...I am glad I did, it was delicious and I would make it again. It was foolproof, anyone who does not like it did something wrong or simply does not like onions and bellpepper.

I wanted an easy side to serve with turkey cutlets, and this seemed to fit the bill. I was so pleased with this side dish that I signed up specifically to rate this recipe. It was great-I was just cooking for two, so I used 3 peaches, half of a large red bell pepper, one jalapeno and one small vidalia onion. It was sweet, slightly spicy and the jalapeno added just the right amount of smokey heat. The colors were also beautiful. I will definitely make this again!

It is fabulous. The sweet, soft peach and the savory, slightly crunchy veggies make a wonderful combo. I bet this would be a good way to serve winter/South American peaches that need that time in the oven to soften them.

This turned out delicious, and I got so many compliments on how beautiful it was. The colors were so gorgeous. Next time I make it, I'm going to add yellow and green bell peppers to add even more color.
