I have made this recipe at least 30 different times, but with a modification. I didn't like the taste of the scallions in it. So I made it with cilantro instead! I love it. Yes, the texture is grainy, but I don't mind. I've tried it with soy milk, non-fat Lactaid milk and with Almond milk. I think almond milk tastes the best, but I like the nutritional benefits of the non-fat Lactaid better. Less sugar, and more protein.

I loved this recipe, it was easy and I only made one modification. I didn't have any almond or soy milk so I used what I had on hand, a combination of 1/2 and 1/2 and lowfat sour cream. Of course it would have been lower in fat/calories if I had used skim milk and I might try that next time with the sour cream. The green onions gave it the zing it needed to brighten up the dish and make it different than most cold soups.

I loved it but I changed it up a bit hence the 4 stars... I used almond milk instead since other people mentioned how they didn't like the texture and to make it seem a bit more savory i added a clove of garlic and a dash of hot sauce. YUM.

This was one of the most horrible things I've ever tasted! Followed the directions, with the exception of grinding the almonds a bit to get a smoother texture. I guess, if you like onions, nuts, & grapes together, this recipe is for you. It was very quick & easy. For me, never again!

Wow, WAY better than I imagined!!! "Smooth" might be a misnomer, as it has a very different texture, but the FLAVOR CAN'T BE BEAT!! Haven't shared with others yet, but feel confident it will be loved by all. What a great cool soup for the summer days. EASY to make and very different. LOVE IT!

Saw this on tv and decided to try it. Didn't want to waste a lot in case I didn't like so I halved the recipe. Didn't feel like cleaning up my blender so used my bella kitchen (generic version of magic bullet Used vanilla almond milk because that's what I had on hand...all to say it was excellent! I think if I go all out it will be even better. It was grainy especially because I didn't use a blender but I liked that part. When I have to chew soup I feel it's more of a meal. Will surely make this over and over in the future.

I will admit the texture is something different. But it has become a favorite everyone I have made this for loves it. I twisted it a bit. I added cilantro and lime juice to it. There is not one person who does not want this recipe that I have come across. I have it at almost all my parties from grilling to even a summer day picnic. I would also say go ahead to the person who needs almond milk. The worst that will happen you won't like it. I have done it with rice milk as well and it was just a good. I hope this helps.
