The actual taste of the gazpacho was nice, but I wasn't crazy over the texture created by the almonds - felt "grainy." I will try to make this again but instead of using almonds and milk separately, I will use almond milk - I think that will bring about the desired taste, as well as texture (in my opinion. Others tried it and liked it (and the texture didn't bother them - this is really a preference thing.

I can't have dairy or soy, so I am wondering if anyone has tried this with almond milk. I love gazpacho but have never had one with fruit before. It looks like something I would really enjoy!

Had never been a Gazpacho person before - my fiancee either - but I made this and I have to say; We were pleasantly surprised.

The blend of flavors was very refreshing. The only modification I had made was I used 1% milk as soy wasn't available at the time. But I'm sure it would've been just as good. Perhaps mine was a little less nutty without the soy.

    Was still delicious.

    Thanks Claire. You rock.

I thought this sounded kind of weird, but I trust Claire, so I tried it. It wasn't bad, it just wasn't something I would make again. I blended it very well, but it was a tad grainy for me. I liked the sweetness of the grapes and the lime, but the onion felt out of place. Next time, I might sub in vanilla soymilk, throw out the onion, and just make myself a refreshing, healthy drink instead.

This recipe really is quick and easy if you have all the ingredients on hand. In the recipe, it says to add the green and white parts of the scallions. I think it's good, but the green parts are hard to swallow even after I pureed them. Plus it makes it a little strong. So, in my opinion I wouldn't add the green parts of the scallions.

it had a "thick" taste and texture. Nice taste of the grapes though. Maybe if we made it with a juice instead of a soy/milk product.

I made this soup tonight and ate it right away. I had high expectations for it. It was sweet and oniony. There was a unique texture to it. I had to chew the grape and almonds a bit. I did blend it very well I thought. Overall, it had a unique taste I had never experienced before. I don't know if I'll be making it again.

I saw her show for the first time this past Saturday morning and it was all about not having to use an oven to prepare a 4 course meal. I was amazed at how easy she made her recipes, and this was the first one I tried....and it was fantastic. My husband and I loved it because you could taste each of the ingredients and they blended together great. We had alittle left over so I plan to bring it to work with me for breakfast. I say breakfast because this would be great for either breakfast, lunch or dinner. It is the consistancy of a smoothie, and is delicious, filling, and healthy. I highly recomend it, A+++++.

I made this gazpacho right after seeing it, and it turned out wonderfully...creamy and sweet, and very refreshing. I substituted light soy milk for the regular and it was just as tasty. Try it!

Sounded good and was just the ticket on the hot day I made this gazpacho. The only thing I'll try the next time I make this is to add a little fresh jalapeno.
