So damn good! I ran across this recipe in my cookbook a couple nights ago. Remembering how we loved it the first time, I made it again tonight. Despite the greasiness of that wonderful sauce--read gravy here--it knocks my socks off every time! I had to sub 1 Tbl of sherry cooking wine and 1 Tbl of apple cider vinegar instead (couldn't find sherry vinegar in the store but it didn't take away from the rich finished product. We'll definitely do this one again and again.

Oh my goodness! Never had steak au poivre but it was definitely one of the best things I've ever made! I used filet mignon instead of bone-in rib eye steaks, substituted beef stock for the vinegar and used a nice cognac instead of brandy. It was delicious! Served with garlic mashed potatoes. My boyfriend said it was one of the best meals he'd ever had.

This has become a staple in our household! It is easy enough to make during the week, but very classy and elegant. Flambee-ing the sauce is a lot of fun! I have made this recipe several times now. I have used different cuts of meat as well and it works well with everything.
I tend to go a little easier on the pepper, so the taste doesn't become too overpowering and also don't use too much vinegar. The recipe yields enough sauce for 4 people. For 2 people, I cut it in half. I love this recipe and I love the sauce.

My husband and I are newlyweds and love cooking in the kitchen together. He's a huge steak fan and I thought this dish seemed simple and elegant. It's good to have someone in the kitchen with you when lighting alcohol on fire, but we both found the recipe easy and extremely, extremely delicious. The sauce is outstanding. We've used different cuts of steak, my husband likes fillet mignon. The sauce also is fantastic over mashed potatoes! yum!

Absolutely love this recipe! Have made it twice now, with rib eye steaks as well as petite sirloins. The sauce is delicious and complements the meat well. The brandy adds a wonderful sweetness to the sauce. My family raves about this steak!

Loved this dish! It was easy to prepare outside on the gas grill in a cast iron skillet. Used 1 TBSP vinegar/1 TBSP sherry. Also, used ribeyes & will try with filets next time. Thanks Claire!

as you said Claire sooo good, I used NY Strip as it looked better at the market than the rib eye. I also thought I had brandy on hand, but I didn't, so I used congnac and it turned out well. I make allot of your recipes and so far I have not been disappointed! So if anyone is sitting on the fence on this one, I say go for it, my husband loved it and it will be a repeat in our home.

Well, the taste was really good, but i had a bit of a problem with the actual cooking of the steak! It is a bit intimidating for me cooking steak at home in a pan... I can't seem to get the meat to become tender enough, it always comes out a bit chewy...any suggestions!? However, overall the taste of the sauce was delicious I too had to use balsamic vinegar but it was great!

OMG!! This is simply delicious!!! I made this for my husband and son yesterday I didn't have any sherry vinegar instead I used balsamic vinegar it came out just as good!!..The first thing my husband said is what is this? i never tasted meat and sauce this GOOD!!..he could not stop eating words was silent. Even my son ate it I was super shock because he's usually not a meat eater..looking forward to making this dish for my family back home...thumbs up to you Claire
