    I used swiss cheese instead. They were great!!! very tasty and kept well for next day leftovers.

    it was a great tasting recipe and easy to make. I USED DRIED CHERRIES INSTEAD OF PRUNES. I had difficulty finding goat cheese im my area. I did not find lemon olive oil so I added lemon juice to the oil. the stuffing favor went througout the porkchop. would recommend this recipe to anyone.

    grear dish was easy to make only thing had problem with was in our area was very hard to find goat chease only one store had it IGA and no in our area carried lemon olive oil so we used bottle lemon juice to add to olive oil great porks the goat chease flavored the whole chop through out

    Made this last night in a microhearth cooker & it was FABULOUS! Instead of pork chops I used butterflied pork tenderloin & instead of the prunes, I used TJ's dried cranberry/pomegranate mix & bumped up spicing with dehydrated lemon peel & fresh thyme. I brushed a tiny bit of lemon olive oil unto microhearth pan which browned it very nicely, then added the chicken stock, splash of vermouth & added my side, brussel sprouts into the pool. With simple pureed squash (salt, pepper, nutmeg was very healthy but yummy - thought I'd have a little left-over but was served to a picky foodie & it disappeared! OK, not 5 ingredients, but still close.

    A keeper! This recipe is going right into my regular rotation. I used dried blueberries and sliced almonds, and can already envision riffs off Claire's recipe in true "BYOC" fashion. I mixed the cheese, dried fruit, and toasted nuts all in one bowl and stuffed all at once. I also figured that if Claire had a 6th ingredient, she'd use wine instead of water to deglaze the pan, so I threw in a nice Pinot Noir I had open anyway - made for a nice, rich, EASY, pan sauce. Can't wait to make this again with chicken, duck, and salmon, using cherries, apricots, hazelnuts....

    OMG - this was wonderful! The pork chops came out so juicy, flavorful, and delicious. I don't cook pork chops a lot because they dry out so easily, but these were so easy and delicious. We will definitely be adding these as a regular menu item. YUM!!!!!

    I thought I had all ingredients on hand. Guess not. So I listened to Claire (great name BTW and used dried figs and smoked almonds and goat cheese. (BYOC - be your own chef. Goat cheese is a fantastic ingredient and I will tweek this recipe in many ways. But, this tweeking was fantastic! Thanks again, Claire!

    My grocery store has a bulk item section. The ingredients were very economical...prunes $.23 and almonds $.44. If you use alot of Claire's recipes she almost always uses infused olive oil. If it is not available in your store or too expensive...make it. We love goat cheese and usually always have some in the fridge. I too let the chops simmer in chicken broth. This is a great technique for getting juicy pork. Thanks Claire!

    OMG these were fabulous! My hubby doesn't like goat cheese or prunes so I just used Boursin cheese and dried cherries and it was so tasty! Served with her ricotta thyme spaetzle for a very yummy meal.
