This was THE best roast I've tasted in a long time! I usually don't deviate from a recipe when I try it for the first time. But, I did with this one slightly and only added a couple of cut carrots with the onions and mushroom---just because. But, I wouldn't again because the recipe's good as is and doesn't need anything else. The roast was moist, flavorful and delicious! My sister tried it and loved it! The mushroom gravy was also a big hit, especially when I topped it on my creamy mashed potatoes, as well as the roast. Can't wait to make it again.

yummy!!! i love this recipe its easy! i did add my own lil' flare to it .... i personally love carrots and potatoes, along with a garlic clove, my house smells delicious!! ENJOY this with a good glass of Merlot! My fiance & kids loooooved it!!!

Very tasty. So tired of pot roast recipes with carrots and potatoes. Who eats them anyway? This was awesome! The only think I had to change was to thicken the gravy a little with a cornstarch slurry. Can't wait for the "eat twice" part of this recipe - Pot Roast Paninis.

While watching the show, I knew I already had a 2-1/2 lb. Sirloin Tip Roast in the freezer. Could not find cremini mushrooms, even though I went to Publix, so substituted 1 lb. baby portabellas, already sliced. I used one large yellow onion & one large Vidalia onion. Holy Cow, there was SO much gravy... we ate it as soup the next day. Yum! Fabulous! I love that you also shared a creative recipe for the left-overs, because that's what I try to do. I did substitute baby spinach for the arugula and it was excellent! Thanks for the recipes!

Claire, I just love your show. You are so enthusiastic about all your recipes. I have enjoyed everyone I tried. This, too, was superb. I did cook it a half hour longer before I removed the lid. Everything else I followed as you suggested. I had plenty of gravy left, so it is in my freezer right now. Too delicious to waste. My husband loved it too....from Barbara in Rhode Island.
