Thank you so much for this delicious recipe!!
I made this for some company that came over on a Sunday evening, and we cooked it in a Dutch Oven over a fire in a fire pit in our back yard!
It was wonderful, and everyone LOVED it!

Thanks, Claire for another great recipe. Made it the other day, and it was outstanding. In fact, made a soup out of it with the left overs. Shreaded the beef and added it to the gravy (which was a little soupy along with all types of veggies. Very delicious. Also, not too salty as was stated in some of the reviews. Will defintely be making this recipe again.

I made the pot roast and the potatoes and parsnips for my mother-in-law and aunt. It was great.The meat was tender, flavorful and moist. The mushrooms really kicked it up a notch. I had read some reviews before making it and only put in 3 1/2 cups of broth still way to much, and it really only took a couple of hrs to bake. My husband and guests agreed this is a meal to prepare again. Love your show Claire.

so easy and sooo delicious! it couldn't have been any easier to prepare. the meat was falling apart and the mushroom gravy (puree was flavorful and rich. will definitely be making this again!

I am a total cooking novice, but I find Claire's show very inspiring, and I appreciate the simplicity of 5 ingredient cooking. I made this last night and was blown away by how delicious and easy it was to make! Definitely a home run!

It was ok. Due to allergic to fungus (mushrooms we used bellpepper and celery with the onion. Was totally better.

The meat was nice and tender at 2 1/2 hrs...I didnt turn it and cook it like it said for another 30 - (I think that would have been too long. The gravy had a good flavor but I only had 1 onion and not quite all the mushrooms it called for, so the 4 cups of broth was too much. I should have reduced it to 2 cups, but still...the gravy tasted good. Overall, it was a pretty good roast but I think I will stick to my good ol' pot roast and vegs in the trusty crock pot!

I too made the smaller version and it was great! Felt like sunday dinner even tho it was mid-week! I will make again!
