    This is the second time I make it. This time I added 2 large garlic cloves and diced onion once turkey browned a bit. I also added dried rosemary and dried thyme to add flavor. I followed the advice of other reviewers and let it simmer for much longer which allowed turkey to soak up the flavors. I added the beans after it simmered a few minutes which did make it creamier. I also doubled the spinach. Delicious!

    Overall, this is a good, healthy recipe. I made a few modifications; since I didn't have garlic infused olive oil, I used EVOO and substitutued garlic salt for the kosher salt. Still, came out somewhat bland, had to re-season w/salt & pepper when it was finishing cooking. Also added a bit of red pepper for color and crunch. Substittuted pinto beans for cannolini beans, as that was what I had on hand.
    Used 5 ounces of 10 ounce bag of spinach, and served over brown rice. Next time I would use whole bag of spinach and serve over penne pasta, as the spinach & turkey gets kind of lost over the beans and rice. Still a good, healthy recipe, and I think would be a great recipe with the listed modifications. Anxious to try this one again !

    Here is my version, turned out really good:

    -Sautee garlic, onions and turkey in some olive oil until browned.
    Season with salt, pepper and herbs (Italian mix, basil etc..
    -deglaze with Madeira or white wine (optional
    -Add in a cube of chicken bouillon (reduced in powder with your fingers
    -Add in spinach
    -let it simmer 10-15min
    -pour over farfalle pasta and grate some parmesan over.

    Very bland. Needs something, and I notice that the other reviewers always added something else to the recipe to add interest.

    I make this weekly. It's so easy. I top it off with Cholula sauce and shaved parmesan and serve it over the 'shroom rice. And more often I make it with ground chicken instead of turkey.

    UPDATE: I didn't think this recipe needed improving, but I messed with it for fun and so that my daughter won't get sick of me making this. ;- This time I replaced the Canellini beans with kidney beans (someone doesn't like white beans, added a bunch of garlic salt, omitted the pepper, and added a couple of generous pinches of an African spice mix called "Ras Al Hanout". AMAZING. Any time I can get my midget stuffing her face with green stuff is a major bonus.

    Original review: This recipe is a keeper. As with most of Claire's recipes, you can do a million different things to it to make it your own, but it's fantastic without any tweaking! I made it to the recipe (I always do the first time, and it was a hit! My 9 year old daughter loved it. It's the first time she's every really liked spinach. We watched the show and she BEGGED me to make it!

    I love this recipe. I add several minced cloves of garlic at the end of browning the turkey instead of using infused oil, add red pepper flakes during the simmer phase, and just discovered the joy of substituting kale for spinach. So good. Be liberal with the salt & pepper as you cook and you'll be fine.

    Made this again last night and was again surprised at how simple ingredients can taste so good! I have posted/rated this recipe before when I made it exactly as the recipe states, which I gave 5 stars and think was good. Last night however I did add a small onion, 1 tsp of red pepper flakes, and 1 clove of garlic. I used frozen spinach instead of fresh and the whole thing was simply delicious! My husband said he would like to add a can of diced tomatoes too, not sure about that because I love the subtle taste of the white beans with the turkey. I serve this over whole grain Penne pasta. Anyway, excellent recipe and I am sure Claire wouldn't mind the tweeks, as she always says BYOC, Be Your Own Chef!

    You have to make it your own, I use italian ground turkey. Add onions and chopped red bell pepper. Yum! The shroom rice is a must to go along with it. Season, season, and season. My kid eats spinach when I make this, I love it!

    this is quite good and super easy to prepare. i think it needs a little more flavoring though- maybe some crushed red pepper flakes.
