    I loved this. Like a previous poster suggested, coconut milk would probably be an awesome sub for the coconut water. I loved the tartness of the greek yogurt with the sweetness of the honey...such a delicious treat!

    Based on the incredible reaction to the taste by Claire on the show, I thought this must be fantastic. I bought everything for it and used up a vanilla bean - and really, really didn't like. In all fairness, I generally don't love yogurt, but felt she really sold this recipe.....I threw it out.

    I love love this smoothie! I even have a variation, this ultra healthy recipe of Claire's though is tough to improve. It is quite easy to find coconut water, coconut milk and cream at your local Asian markets by the way.

    I have a small ice cream machine (from Costco - $30 and have been enjoying making these types of recipes for summer. I use one can of coconut milk instead of the ice cubes, mixed with the yogurt, chopped mint and vanilla honey to make a slurry, put that in the ice cream maker long enough to chill it to smoothie consistency. It's SO very delicious this way and a little richer

    Either way food fans, this recipe is worth the effort.

    Wow! This was delicious! The vanilla honey was fantastic. I used Vita Coco coconut water. I find it a lot better than Zico.

    Plan ahead since your syrup has to simmer and cool!!
    I only used half of my syrup for 2 shakes and they were plenty sweet. The coconut is not a strong flavor, but it's good! I balanced at the end with a touch of lime juice- didn't have mint.
    The small juice boxes of coconut water are perfect to fill the ice tray. I even saw some flavored w/ passion fruit at my Kroger in the nutritional section.That might be good for this as well.
    This is a tad expensive to make with the vanilla bean and if you buy good honey, but since the syrup will extend to more I'll make again.
