    I think this salad is delicious. The slight bitter taste of the endive and the tartness of the lemon compliment each other perfectly. And I love that it was so easy and quick to make. Thank you, Claire!!

    Pretty yummy!! Someone said that the lemon was too much for them in their rating, use a meyer lemon it's a much easier lemon taste!!

    This is a delicious salad! It is so simple and fresh tasting! You can even use the jarred roasted red peppers to save a step! Yum!

    This salad is amazing! I can't believe that a few simple ingredients could turn out so well! I couldn't find the jarred white beans so I used the ones from the can (drained and rinsed well and seasoned them with Itlaian seasoning. I didn't do the garlic olive oil because I'm not a fan of garlic. Instead, I cut the red pepper up and sauted it in the pan with olive oil which gave the oil a great flavor. This salad pairs great with a slice of quiche or some soup. I will try more recipes from Claire!!!

    I have tried several of Claire's recipes and they have been good. This one not so much. Way too much lemon in the dressing for my taste. Might try again with a different one but I doubt it.
