I keep coming back to this recipe whenever I want to make a frittata. It's so simple and versatile, I add mushrooms or shrimp or whatever else is on the fridge. I just love it! :

Easy and delicious!! I followed the recipe exactly. As I love cheese I may increase the amount of goat cheese next time. Simple and soooooo good! I love Claire's show. She has a great personality. I wish I lived next door to her.

Amazing and so easy! The goat cheese is a delicious addition. I used an 8 inch skillet - took about 9 - 12 minutes to cook through. I knew it was ready when it was brown around the sides and just set in the middle.

Made two of these for our Easter Brunch, one with the ingredients listed the other with bacon and cheddar. Both turned out delicious. One was made the night before and it reheated very well. Quick, easy and good tasting! My kind of meal.

I made this for my husband and we both enjoyed it. Used regualar cheddar cheese. This is my 2nd attempt using goat cheese and can I say I love the goat cheese along with the presentation. Thank you Claire.

I made this for my husband AND MY Son-in law today and it was so good I followed recipe to the "T" I did cut alittle on the goat cheese only because I was introducing it to my hubby for the first time but they said it was very good it is a keeper thank you Claire!

I used different ingredients. Mushrooms instead of zucchini. I added chopped roma tomatoes and some bacon bits along with mozzerella and cheddar cheese (instead of goat cheese at the end. But the technique was spot on! No flipping and it was perfect. It was almost like breakfast pizza! Easy thing to make on a weekend.
