I was a bit nervous witrh this one at first. The flavors are really interesting. Obviously, don't use wine you wouldn't drink. The salty olives balance with the sweet orange really nicely and the cod just takes on the flavor of what's around it. I also used brown rice with parsley and butter instead of white. Since the cod is so light, I think this makes the meal a bit heartier and keeps you full longer. Besides... brown rice is healthy.
