I made this today for St. Patrick's Day. I'm from an Irish Family and used to make this often. I liked the addition of the kale. Only problem was - 5 potatoes??? Every time I've had colcannon its mostly mashed potatoes with some cabbage added. I used 9 medium size potatoes and the proportions were perfect. Otherwise, it would have been mostly kale and cabbage. I also prefer onion - shallots don't have enough flavor (in my opinion I'm glad I tried it though.

I made this for a St. Patrick's Day dinner instead of boiling the potatoes with the corned beef. They were a big hit and a very pretty presentation.

I really loved the crisp greens that went into this dish! We made it for an Irish food themed party and all of the guests loved it! I will certainly be making this again.

I've made colcanon before but the leeks are a great addition. I lightened it up a bit and it was still very good.

I never use as much fat as the recipe calls for, because my husband has heart problems. I combined a few recipes and used 1/2 head of cabbage, and a bunch of green kale, sauteed them with a little ham and onion, and mixed them at the end with the potatoes, that I mashed with fresh green onions, fat free half and half and a little butter. Served it with some roasted carrots and onions. Good hearty dish that didn't make me feel guilty!
