  • 3 tablespoons cider vinegar
  • 1/3 cup canola oil
  • 1/2 head red cabbage, shredded
  • 1 large carrot, peeled and shredded
  • 1 bell pepper, sliced
  • Salt and pepper
Directions
  • In large bowl, whisk together the Dijon, cider vinegar, and canola oil. Add cabbage, carrot, and bell peppers and stir to combine. Season with salt and pepper, to taste.
