Very good recipe but like another poster stated, you MUST have the grated cheese on Mexican Street Corn. I know most people use the standard grated stuff in the green can instead of an authentic Mexican cheese and it will do. I would give this recipe a five star easy but the corn should be roasted on a charcoal grill and again, add the cheese please! Her mayo mixture is spot on!

We love, love, love this corn!!! It's great on ears of corn, but we like it a bowl of corn just as much. Great recipe and so easy too!

Soooo good! We loved it! Instead of the stovetop grill pan Sunny used, we put it on the outdoor charcoal grill, because we were also grilling steaks to go with it. That added another layer of flavor that was perfect. We used Miracle Whip. Mayo purists [LOL!] will argue that it's not mayo; it's salad dressing - which is what I think it says on the label. Anyhoo, I can't imagine putting something so heavy on a salad. So, it's mayo to me! I love the little bit of sweet tang that it has over mayo. That bit of flavor also made the corn even sweeter . . . even better! Can't wait to try it again! Maybe tonight!

What, no cheese? You have to have cheese on MSC! Parmesan or pecorino Romano is really good. This type of course is the bomb.

This reminds me of growing up in a small town waiting for the corn man to come to our street. This recipe is amazing. The only I do differently is sprinkle grated parmesan cheese on it.

I live in the Cornhusker State and I am not a big fan of corn on the cob! Saying that is practically blasphemy in this state. I tried this recipe and I totally love it. I will actually eat corn on the cob now.
The bad part is: when you talk to people about putting mayo on corn- it sounds weird. When I have guests try it, they absolutely love the taste. I take the spicy mayo and lime with me to barbeque parties. I use it on grilled or steamed corn- won't eat corn without the mayo and lime. I add cumin, chili powder and other Mexican spices into the mayo- awesome.
I am so grateful that Sunny shared this great recipe!

I made this tonight for dinner and it made our meal. I served it with a marinated london broil that was cooked on the grill and a baked/grilled potato. We ate the corn last (i covered it with foil and it was truly the best corn I've ever had! I'm gonna make this for our riboff competition. Should be yummy!

This was so good and so easy to make! Everyone loved it. I too added a bit of cayenne for a little extra kick. Will try the cheese suggestion next time!
