    I'd only done collards with bacon, but was going to a Thanksgiving where some present do not eat pork. So, I searched for a recipe and found this one, and am I glad I did. I made a large batch - 4 bunches of collards - so winged the quantities. It came out beautifully. I did add chicken broth as that's what I had. I'd suggest moderating the red pepper flakes, then checking before adding more. They give it a nice kick. I also used pretty much a whole can of chopped tomatoes. The tomatoes I think are good here - the color and flavor is really nice with it. Lastly, I splashed it with rice wine vinegar. Perfect! Can't wait to bring it to dinner. Thank you.

    Eggselent Recipe!!! And I wasn't expecting much! There were probably 30 people at our party and I received compliments from at least 10 of them (not all tried the greens-there was a lot left over!

    Funny story: I made this for a work party with people who are all excellent "Soul Food" cooks from Louisiana - One of the ladies even told me laughingly that she "cant wait to see what Caucasian collard greens taste like"! Well...... she was in for a treat and told me they were the best meatless greens she'd ever had. Thanks Sunny! : -

    I would make this again! By the way .... Sunny's Caribbean wings rock too!!

    I thought this recipe was pretty tasty. I will agree that the 1 tsp of chile flakes makes it spicy, so if you have some spice-challenged dinner guests, you may wish to cut back. Also, per the recommendation of jghermosillo, I added some vinegar right at the end. That vinegar added a little zing to the greens. I have not tried liquid smoke, but I am sure that would make it rather tasty, as well!! I think this is a good basic recipe, one in which you can make into your own by varying the ingredients!!

    This dish came out too spicy for me. Looking back, I guess it was the 1 teaspoon of red pepper flakes, which now that I think about it, seems like a lot for a vegetable dish. I also found myself adding salt at the table, but maybe that's because I used low sodium vegetable broth. With some modifications this would probably be fine though.

    I made these for my yearly Christmas bash, where some self-proclaimed greens experts tried them. I got complimented on these vegetarian greens all night long! These are truly tasty, healthy greens. My three secret flavor boosters are smoked paprika, about half a tablespoon that I put in a minute before adding the broth, and a splash of liquid smoke when I add the liquid. About 10 minutes before serving, I put in a splash of vinegar which I find really rounds out the flavor of the greens. I also use chicken broth for a bit more flavor. I do use a bit more broth than directed because I use the leftover liquid, which is really, really flavorful, to make some grits to serve along with the greens. I tell you absolutely delicious and my greens expert friends didn't miss the meat at all. They were all surprised and impressed that these were veggie style.

    I love greens, but have never made collards myself. This recipe is simple, healthy, and delicious! The only change I made was to use 2 cups of vegetable broth instead of 3 cups. I make this recipe on a regular basis and everyone I have shared it with loves it too. Simply wonderful!

    I added a tsp. Of honey at the beginning and substituted chicken stock. Super flavorful. My husband and i really enjoyed.
