I LOVE southern food, but am always trying to find ways to keep the flavor without all the fat. This turned out great, and I used chicken stock which was all I had and added more red pepper flakes because I love spicy.

I've got to say, I was skeptical about a recipe for greens without a ham hock or smoked turkey, but I decided to try this recipe because there were so many great reviews. I am glad that I gave it a chance! I actually had a bag of precooked frozen collard greens from the grocery store already in the freezer and I decided to use them in this recipe, so I only used one cup of stock and a little vinegar (because my mom always does and I am very impressed with the end result. I really love this recipe because it's so quick and easy, now you can make collards as a weeknight vegetable, not just at special holidays! You hit the mark on this one Sunny!

I have never made collard greens before. This recipe was delicious! I took the collard greens to a southern dinner and they disappeared! People were amazed that this recipe called for no meat. This recipe is definately a keeper.

At the tender age of 45, I began cooking (I got hitched. Since we only eat fish and veggies, I'm always looking for easy, quick veggie meals. Sunny, this recipe is THE best! I've made the collards three times - each and every time the dish is a winner. THANK UUUUUU!!!

If your looking for a way to slim down the greens this is the way to do it and still retain that wonderful slow-cooked taste of the full fat version.

This was so good. It was close to my moms without the added fat. Sunny you hit it on the money with this one.

This recipie is excellent. I've been looking for a vegetarian or turkey based greens recipie for awhile. This one is excellent and cooks quicker than other recipies I've seen. I also added two strips of cooked turkey bacon at the end to add a smoky flavor.

I love her vegetarian version of the Southern classic. They taste just as good without the meat flavoring.
