    I did this recipe on notice short with what I had on hand (which by the way Yukon gold potatoes are a delicious alternative to russets and I was pleased with the results. I'll definitely be trying this one again when I have the sweet potato to add to the mix. It is good with just the salt and pepper on it, though I think another alternative is mild crushed red pepper or chipotle on it instead if you want to add a bit of zing.

    This recipe has changed my mind about sweet potatoes. I never liked then as a child, so as an adult, never bought them. I was given a bag of them and had to find out how to prepare them. Figured this recipe would give a good mix of vegis if I didn't like them. I actually did 3 sweet and 3 regular potatoes, also added 1 jalapeno (half seeded for the spice and heat. Oh My!!! I loved it and the family loved it. It has been added to my recipe box and will definitely be used again. Maybe with only sweet potatoes next time, I have been converted, now a lover not hater. (At least prepared this way!!!!
