Ingredients

  • 1/2 medium cucumber
  • 1 ripe small California avocado
  • 1 scallion
  • 1 garlic clove
  • 2 tablespoons fresh coriander leaves
  • 2 tablespoons fresh lemon juice
  • 1/2 cup plain yogurt
  • 1/2 cup cold water
  • 1/2 cup ice cubes

Garnish:

  • 2 fresh coriander sprigs

Directions

Peel cucumber and cut into 4 pieces. Quarter avocado, removing pit, and peel. Cut scallion into large pieces. In a blender puree all ingredients until smooth and season with salt and pepper.

Serve soup garnished with coriander.

    This is great! I used a whole cucumber, light plain yogurt, a dash of ground coriander and I didn't have any ice on hand, so... I just used a little more water in my food processor and then chilled it in the fridge before serving. Perfect! I was really surprised at how easy it was and it's really refreshing and healthy. I served it with Ina Garten's roasted shrimp with orzo pasta...compliments eachother well and is a great summery combo. Will definitely be using this soup recipe again and again! Read more

    The best thing about this recipe is how easy and fast it is. I didn't have a scallion so I made without. The flavor is good... but it's not something I would eat as a soup. It needs something to go with it to add texture, but I haven't figured out what.Read more

    This is a great summer soup! I make it at least twice a week and my husband has yet to tire of it. He likes dill better... than cilantro so I have used that instead many times. Either way, this is really good.Read more
