This was my first attempt at making this and i wanted to make it lower in fat and faster so we could have it with a nice Arugula salad. Here's what I did, I substituted Natures Path Pumpkin Flax Granola for the Oats part, used a basic Egg wash 2 eggs and water, used White Corn Meal instead of flour, dried thyme and grated Parmesan cheese. It came out fabulous.

The meal was tasty, but it definitely took longer than the 15 min. prep time listed. I actually liked the jasmine rice better before I added the fruit and vegetable ingredients and would serve it again that way with other dishes.

I have made this 3 times in the last 6 months and it is everyones favorite. Definately worth the time and effort. It's delicious!
