Ingredients

  • 1 cup flour
  • 2 teaspoons garlic powder
  • 3/4 teaspoon baking powder
  • Salt to taste
  • 1 Scotch Bonnet chili, chopped
  • 3 scallions, chopped
  • 1 tomato, chopped
  • 1 egg, beaten
  • 1/2 pound salt cod
  • 1/4 cup water

Directions

Soak salt cod for at least 5 hours, or overnight, changing water several times, prior to cooking.

Mix flour, garlic powder, baking powder and salt in a bowl. Add chili, scallions, tomato and stir in beaten egg. Add codfish and enough water to make the mixture kneadable. Knead ingredients and shape into 2-inch patties. Fry patties in a bit of oil in a skillet for 2 to 3 minutes until golden brown

    thank you for this great recipe - got me to my mom's version easily. for anyone with a bit more time, substitute fresh scallion (green onion and 2 gloves of fresh garlic instead of the powdered variety. also these days , codfish is not so salty so that extended prep is not really necessary, just boil the cod, run some cold water over it , then flake it. a trick- rub pieces together to flake the fish - works beautifully. oh, and mind the scotch bonnet pepper - maybe a half or so and leave out the seeds! that'll hurt. nice and easy recipe. thank you!
