Ingredients

  • 1 onion, chopped fine
  • 1 red bell pepper, chopped fine
  • 2 large garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 1/2 cup canned solid pack pumpkin
  • 1 cup chicken broth
  • 1/2 cup water
  • 2 tablespoons heavy cream
  • Freshly grated nutmeg to taste
  • 1/2 pound penne or other tubular pasta
  • 3 tablespoons minced fresh parsley leaves
  • Freshly grated Parmesan as an accompaniment

Directions

In a large skillet cook the onion, the bell pepper, and the garlic in the butter over moderate heat, stirring, until the vegetables are softened, stir in the pumpkin, the broth, the water, the cream, the nutmeg, and salt and pepper to taste, and simmer the sauce, stirring occasionally, for 10 minutes. While the sauce is simmering, in a kettle of salted boiling water boil the penne until it is al dente, ladle out the reserve about 1 cup of the cooking water, and drain the penne well.

Add the penne to the sauce, cook the mixture over moderate heat, stirring and thinning the sauce as desired with some of the reserved cooking water, for 1 to 2 minutes, or until the pasta is coated well, and stir in the parsley. Divide the pasta between 2 plates and serve it with the Parmesan.

    The basic sauce is a keeper. Here's how I tweaked it.

    and my family really enjoyed it. The sauce thickens up nicely if you throw 4/5s of it into a food processor and puree it. ... I added about 1t of cayenne and a pinch of nutmeg. It still isn't a whole main course so I sliced up an eggplant, sweated it and brushed both sides of the slices with cayenne, basil and olive oil. Broiled these in the oven with some sliced bell peppers. My mistake is always in overcooking eggplant so this time I only gave each side 3-5 minutes. The pumpkin sauce is clear and sweet -- surprisingly sweet. The cheese topping (I used feta) makes a nice contrast. I'll be using this recipe again. Thanks. Read more

    I followed everyone's comments as to why they didn't like it and omitted the water and red peppers. Then I added another... Tbsp of cream and added a few dashes of cinnamon, allspice, salt and freshly ground pepper, and a couple of pinches of white sugar. I also threw in some premade apple chicken sausauge, sliced thin, and served it for my company. They didn't realize pumpkin could make such a good and healthy sauce!     This helped a ton to blend flavors! I used more chicken broth and fat free half and half. You have to taste as you go along... and add accordingly. Kids love this recipe!Read more

    I love pumpkin foods. I made a pumpkin themed meal for my girlfriend and this was the pasta I made and it was TERRIBLE. Good... thing the soup (RR's pumpkin and black bean) and other things I made were so good or the whole dinner would've been ruined.Read more

    The pasta was ok...I think I scard people because the dish was orange colored and my guest really couldn't tell what it was.
