    Anyone who couldn't follow this recipe properly needs a gift certificate to a basic cooking class. They tasted like they use to when I was a kid. Just use your judgment and add a little extra of this, decrease a little extra of that, and you can't miss. THE BEST EVER!

    The job of making 'latkes' is tough. My mother used to grate the potatoes by hand with a grater (the blood was an extra. Now I use the food processor-not too smooth. It's easier and they can be made ahead and frozen for reheating.

    I was going to serve these latkes to my third graders for our Hanukkah celebration. In the middle of cooking them, per this recipe, I abandoned ship. They were AWFUL. They fell apart and were inedible. The potato never fully cooked, there wasn't enough oil so the bottoms burned. My students never got their latkes and I was really disppointed. It just goes to show that to make latkes, you need your bubbe rather than a recipe.
